I&#8217;ve done this experiment before, and stainless steel surprised me by matching cast iron, but I still prefer cast iron at home. So today, I\u2019m putting that assumption to the test.<\/span><\/p>\n<p data-start=\"180\" data-end=\"217\"><span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">I\u2019m using a unique technique: slicing the steak into 1\u202fcm pieces before salting generously and letting it sit, so each bite gets more surface flavour. While it\u2019s resting, I heat two seasoned plates, cast iron and stainless, both pre-oiled and brought to about 150\u2013180\u202f\u00b0C, to compare how they cook.<\/span><\/p>\n<p data-start=\"219\" data-end=\"333\"><span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">After cooking both batches side by side, I&#8217;m going to taste-test them to see which one stands out.<\/span><\/p>\n<p data-start=\"335\" data-end=\"411\"><span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">The results are surprising!<\/span><\/p>\n<p data-start=\"413\" data-end=\"637\">So, should you reach for cast iron or stainless steel?
