That\u2019s it. Too rare and you miss the magic. No problem.<br \/>\nA splash of water cools things down and adds a beautiful burst of smoke. Dry wood gives you heat; water gives you control. Outdoor cooking doesn\u2019t need to be perfect; it just needs to be enjoyable.<\/p>\n<h3 data-start=\"3009\" data-end=\"3029\">The Final Result<\/h3>\n<p data-start=\"3030\" data-end=\"3237\">Golden, smoky lamb. Perfectly seasoned scotch fillet with a crunchy, rendered fat cap. No sauces needed. Maybe a salad if someone insists.
