This cut has quickly become my favourite, and it just might be yours, too.<\/p>\n<p data-start=\"205\" data-end=\"435\"><span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">I recently cooked picanha for the first time and loved it so much, I knew I needed to do it again and get it just right. Picanha, also known as rump cap, stands out for its thick fat cap that melts into the meat and enhances its rich, beefy flavour<\/span>. <span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">Rump is naturally flavourful thanks to its well-exercised muscles and connective tissues<\/span>. <span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">When cooked to medium-rare and sliced thin, it&#8217;s absolutely sensational.<\/span><\/p>\n<p data-start=\"437\" data-end=\"474\"><span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">Today\u2019s cook uses a top-quality picanha from <a href=\"https:\/\/choponlinemeats.com\/?gad_source=1&amp;gad_campaignid=21954523652&amp;gbraid=0AAAAAo7ZXCtLcaInJsL69vd5424iPSfE7&amp;gclid=CjwKCAjwsZPDBhBWEiwADuO6ywTm3NIubGTJZIdPxwMtsZUYLSCVSf8mZpo7aAiG7e7buH61W89MGxoC4u0QAvD_BwE\">Chop Online Meats<\/a>, sourced locally in New\u202fZealand, which arrived fast and beautifully marbled with plenty of fat cap. While those outside NZ might not have access, Kiwis, this one\u2019s for you!<\/span><\/p>\n<p data-start=\"476\" data-end=\"633\"><span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">I begin with a generous dry-brine: piling on kosher salt and letting it rest so the seasoning penetrates deep into the meat.<\/span>\u00a0<span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">Then, I skewer the picanha and cook it slowly over embers and smoke from black wattle and cherry wood, using a low swing-frame heat to gently render the fat and infuse smoky flavours<\/span>.<\/p>\n<p data-start=\"635\" data-end=\"754\"><span class=\"relative -mx-px my-&#091;-0.2rem&#093; rounded px-px py-&#091;0.2rem&#093; transition-colors duration-100 ease-in-out\">While the meat cooks over a relaxing 2\u20133 hours, I whip up a vibrant <strong data-start=\"68\" data-end=\"87\">red chimichurri sauce<\/strong>\u2014using roasted red peppers, parsley, cilantro, smoked paprika, garlic, red wine vinegar, olive oil, and a touch of chilli flakes<\/span>\u2014ready to complement the meat perfectly.<\/p>\n<p data-start=\"756\" data-end=\"963\">Finally, we slice the medium-rare, smoky picanha thin and dig in. The result?
