It comes from the shoulder, is packed with flavour, but also full of connective tissue, which is why it\u2019s usually labelled as \u201cbest slow-cooked.\u201d So naturally\u2026<strong>we did the opposit<\/strong>e and tried to grill it hot and fast.<\/p>\n<p data-start=\"476\" data-end=\"964\"><strong>The approach was simple but intentional:<\/strong> slice the steak thin and across the grain to shorten the muscle fibres, season it generously with salt to bring out the natural flavour, and cook it extremely hot and fast around 300\u2013350\u00b0C for just 15\u201320 seconds per side, aiming for a quick sear without overcooking.
