Dirty Steak on the Embers
-  Chosen cut: Sirloin, as it isn’t too thick to undercook or burn. 
-  Seasoning: Simple salt, even more salt is welcome. 
-  Setup: Hardwood coals (cherry and wattle), no treated lumber as they’ve got some terrible chemicals in them. 
-  Placement: Sizzle the steak straight on hot coals. Flames are carefully avoided. 
How Long to Cook?
Typical dirty steak timing:
-  Sear each side 2–3 minutes for rare to medium-rare 
-  Check for white ash covering the coals, blow or fan away loose ash beforehand 
-  Move the meat to cooler embers to prevent charring while cooking through
