Low and Slow Beef Short Ribs
Ingredients
- 1 whole plate of New Zealand beef short ribs (4 separate ribs)
- 2 cups tomato pasta sauce
- 1 cup water
- 1 cup red wine
- 6 garlic cloves, finely chopped
- 2 brown onions, chopped
- Fresh thyme, to taste
- Fresh basil, to taste
Method
Preparation:
- Cut the whole plate of beef short ribs into individual pieces.
Searing:
- Sear the short ribs on all sides until browned.
Cooking:
- Place the seared short ribs into an Ironclad pan or Dutch oven.
- Add the tomato pasta sauce, water, red wine, chopped garlic, and chopped onions to the pan.
- Sprinkle fresh thyme and basil on top of the ingredients.
- Cover the pan and place it on the swing frame over a small amount of embers in the Flare outdoor fireplace.
- Cook on low heat for 4 to 5 hours, or until the short ribs are tender and fall apart easily.
Resting and Serving:
- Once cooked, let the short ribs rest for 10 minutes before serving.
- Serve the beef short ribs with your favorite sides and enjoy!
