Cooking a 3-Course Meal on the Flare Outdoor Fireplace

Ever tried cooking a full three-course meal entirely on an outdoor fireplace? I hadn’t… until now! And honestly,  it turned out pretty epic.

If you’re looking for inspiration for your next backyard cooking session, here’s the full lineup I tackled:

Entrée: Seared Prawns & Scallops in Garlic Butter

These prawns and scallops were the perfect way to kick things off. While the Stainless Steel Hot Plate was heating up, I patted them dry with a paper towel and seasoned them with salt. Once the plate was hot, I placed them straight on the surface and let them sear until they picked up that beautiful golden colour. A touch of garlic butter to finish, a few more minutes over the flame, and that’s all it takes.

Main: Smoked Lamb with Crispy Potatoes & Garlic Asparagus

For the main course, we brought out the Flare Smoker System and hung the leg of lamb from the smoker hook inside the chimney. As it cooked low and slow, the lamb absorbed the perfect amount of wood-fired flavour, tender, smoky, and juicy. While the lamb smoked, we grilled par-boiled potatoes on the hotplate until they were golden and crisp, and added garlic asparagus as well.

Dessert: Warm Berry Spongetop Pudding

To finish, I went for a classic comfort dessert, a warm berry spongetop pudding cooked in a Cast-Iron Dutch oven right in the fireplace. It was sweet, soft, and cooked to perfection!
