Low and Slow Beef Short Ribs
Ingredients
  • 1 whole plate of New Zealand beef short ribs (4 separate ribs)
  • 2 cups tomato pasta sauce
  • 1 cup water
  • 1 cup red wine
  • 6 garlic cloves, finely chopped
  • 2 brown onions, chopped
  • Fresh thyme, to taste
  • Fresh basil, to taste
Method
Preparation:
  1. Cut the whole plate of beef short ribs into individual pieces.
Searing:
  1. Sear the short ribs on all sides until browned.
Cooking:
  1. Place the seared short ribs into an Ironclad pan or Dutch oven.
  2. Add the tomato pasta sauce, water, red wine, chopped garlic, and chopped onions to the pan.
  3. Sprinkle fresh thyme and basil on top of the ingredients.
  4. Cover the pan and place it on the swing frame over a small amount of embers in the Flare outdoor fireplace.
  5. Cook on low heat for 4 to 5 hours, or until the short ribs are tender and fall apart easily.
Resting and Serving:
  1. Once cooked, let the short ribs rest for 10 minutes before serving.
  2. Serve the beef short ribs with your favorite sides and enjoy!
