I’ve had my fire going for about an hour, and it’s nice and hot. I’ll drag the fire to one side and set up the rotisserie over some embers. First, I’ll prepare the rotisserie. You need to tie the meat, and butcher string works best, but any cooking string will do. You don’t need to be fancy—just salt and pepper is fine. I’ve tied up the lamb with the fat on the outside, which helps it baste and adds flavor. Now, I’m going to get the fire ready. Drag the embers under the rotisserie on one side, and keep the flames on the other. You don’t need a lot of embers; once the firebricks are warm, they hold the heat.
I prefer using the swing frame for the rotisserie because it gives me options and keeps the meat a bit further from the heat. Once everything is set up, you can sit back and relax with a glass of wine while the rotisserie does its thing.
After about 15 minutes, check on the meat. It’s getting some nice color. You don’t need to be too fussy with the heat. If your hand can’t stay between the meat and the embers for more than a few seconds, it’s hot enough. After about an hour and a half, the lamb should be done. It might look a bit overdone, but that’s fine. I like my lamb well-cooked and falling apart. Once you cut into it, you’ll see it’s perfect. The fat has melted into the meat, making it juicy and flavourful. This method is so easy, you can ignore the meat while it cooks. If you’re cooking for your family, add some vegetables to the fire. In an hour and a half, dinner is ready for four.
