Blue often hosts 15–30 guests at a time and wanted a system that allowed him to cook efficiently while still enjoying the company of his friends.
The key, according to Blue, starts with the heat source. Using a custom-built firebox frame inspired by South American designs, he’s able to control the temperature by managing the coals and ash, creating a consistent heat that can cook multiple pizzas quickly. “All I’m doing is putting wood in,” he explains. “I don’t have to move anything, just shift the ash to get the heat I want.”
Preparation is also crucial. Blue makes all the pizzas before guests arrive, stacking them on a custom rack that can hold up to 12 pizzas. “It’s all about having a system,” he says. “Once the pizzas are cooked, I can dismantle the firebox, cool it down, and it becomes a conversation piece for the night.”
As for toppings, Blue gets creative. From a salmon and caper pizza on cream cheese to tandoori chicken with pear, walnuts, mozzarella, and honey, every pizza is thoughtfully crafted. “You can make pizzas at home as good as a restaurant,” he says. “A good base, fresh sauce, and quality toppings are all you need.”
Temperature management is another essential factor. Blue rotates each pizza during cooking to ensure the base crisps evenly and the toppings are perfectly melted. Using a long pizza peel, he lifts and spins pizzas as needed to prevent burning while achieving a restaurant-quality finish.
Beyond technique, Blue emphasises that cooking on the Flare is about fun and creativity. “Mix flavours, make mistakes, hang out with friends, that’s the best part,” he says.
