Dirty Steak on the Embers

Chosen cut: Sirloin, as it isn’t too thick to undercook or burn.

Seasoning: Simple salt, even more salt is welcome.

Setup: Hardwood coals (cherry and wattle), no treated lumber as they’ve got some terrible chemicals in them.

Placement: Sizzle the steak straight on hot coals. Flames are carefully avoided.
How Long to Cook?
Typical dirty steak timing:

Check for white ash covering the coals, blow or fan away loose ash beforehand
